         		<title>Cranberry Apricot Pumpkin Bread</title>

	                A great quickbread for autumn. Yes, I know the picture isn&#039;t the best, but believe me it tastes much better than it looks.

Cranberry Appricot Pumpkin Bread

2C Flour
1tsp Cinnamon
1/2tsp Allspice
1/2tsp Nutmeg
3/4tsp Salt
1tsp Baking Soda
1tsp Baking Powder
6Tbsp Butter, softened
1C Brown Sugar
2 Eggs
1Can Pumpkin
1tsp Vanilla
1/3C Soy Milk
1/3C Orange Juice
1C Dried Cranberries
1/2C Chopped Dried Apricots
1/2C Sliced Almonds

1. Heat overn to 350 and butter a bundt pan

2. Mix together the first 7 ingredients

3. In another bowl beat together the butter and sugar until creamy. Mix in eggs and pumpkin. Add the bowl of dry ingredients and mix until blended. Mix in vanilla, milk, and juice

4. Fold in cranberries, apricots, and nuts.

5. Pour batter into the prepared bundt pan and bake for 80 minutes. Test readiness with a toothpick. If it comes out clean the bread is ready.
